Pancit Bihon
Ingredients
- 6 pieces chicken thighs
- 1/4 cup corn oil
- 1 tablespoon garlic, minced
- 1/2 cup onions, sliced
- 3 cups chicken stock
- 1 cup fishballs, sliced into rounds
- 1 teaspoon pepper, ground
- 1 teaspoon garlic powder
- 1 cup carrots, cut into thin strips
- 3 cups cabbage, shredded
- 1 cup sweat peas, remove strings
- 1 kilo bihon or rice noodles
- 3 tablespoons soy sauce
- 1/4 cup spring onions, finely chopped
- 3 tablespoons soy sauce
- 1 tablespoon fried garlic
Cooking Instructions
- Fill half a pot with water.
- Cover and allow to boil.
- Add chicken, cover again and allow to boil.
- Simmer chicken until tender.
- Cool the chicken then flake the chicken meat.
- Saute garlic and onions until wilted.
- Add chicken stock, shredded chicken and fish balls. Boil.
- When fish balls have puffed up add seasonings and carrots.
- Simmer until carrots are tender.
- Add other vegetables and mix.
- Add noodles and soy sauce.
- Mix until noodles become swollen.
- Serve topped with spring onions and garlic.
