Mooncake
Ingredients for Flaky Dough
- 2 cups flour
- 5 tablespoons lard
Water shortening Dough
- 1 cups flour
- 5 tablespoons lard
- 10 tablespoons water
- 1/4 teaspoon salt
Ingredients for Filling
- 10 cups water
- 1 pound red azuki beans
- 3/4 cup lard or oil
- 1-3/4 cups sugar
Cooking Instructions
- Soak red beans in water for 2 hours then drain.
- Cover with 8 cups fresh water and bring to a boil.
- Turn down heat and simmer for 90 minutes.
- Strain the beans and discard the skins.
- Cook the beans with oil and sugar. Cook until there is no moisture left. Set aside.
- Mix all ingredients for flaky dough until smooth. Set aside.
- Mix all ingredients for water-shortening dough until smooth. Set aside.
- Divide beans into twenty portions.
- Divide flaky dough into twenty pieces.
- Divide water-shortening dough into twenty pieces.
- Wrap each flaky dough piece inside each water-shortening dough piece.
- Roll out and fold then roll out and fold again.
- Flatten the dough combination into a circle and put a filling in the center.
- Seal the dough around the filling and place in a mold.
- Invert and remove the mold
- Do this for all twenty mooncakes
- Heat oven to 350 degrees Fahrenheit
- Bake mooncakes for 20 minutes. Serve
