Meatloaf
Ingredients
- 3 cloves garlic, peeled
- 1 carrot, minced
- 1 rib celery, minced
- 1/2 onion
- 1/2 bell pepper, seeded and minced
- 4 white mushrooms, minced
- 2 tbsp olive oil
- 1 tbsp butter
- 2 1/2 pounds ground beef
- 1 tbsp Worcestershire sauce
- 1 tsp dried Italian herbs
- 2 tsp salt
- 1 tsp black pepper
- 1/2 tsp cayenne pepper
- 2 eggs
- 1 cup plain bread crumbs
- 2 tbsp brown sugar
- 2 tbsp ketchup
- 2 tbsp Dijon mustard
Cooking Instructions
- Mix the carrot, celery, onion, red bell pepper, and white mushrooms.
- In a pan, saute the mix in butter and olive oil for 5 minutes. Set aside.
- Combine the vegetable mix and the ground beef together with all the other ingredients except the sugar, ketchup and mustard and mix by hand.
- Form the mix into a loaf shape. Make sure the meatloaf is packed tight.
- Preheat oven to 325 degrees Fahrenheit.
- Bake for 30 minutes.
- Combine the sugar, mustard and ketchup.
- Remove the meat from the oven after 30 minutes and brush the sugar mix on top of the meatloaf.
- Bake for an additional 30 minutes. Serve.
