Fruitcake
Ingredients
- 1 1/2 cup all purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/3 cup cocoa powder
- 1/2 teaspoon cinnamon
- 1/2 teaspoon ground mace
- 1/4 teaspoon nutmeg
- 1/4 teaspoon allspice
- cloves
- 1 cup raisins
- 3/4 cups glazed fruits
- 1/2 cup walnuts, chopped
- 1/2 cup butter
- 1 cup brown sugar
- 2 eggs
- 2 tablespoons molasses
- 1/4 cup milk, with 1 teaspoon lemon juice
- 1 tablespoon brandy
Ingredients for Toppings
- glazed cherries
- raisins
- walnut halves
- brandy for brushing
Cooking Instructions
- Preheat oven to 275 degrees Fahrenheit.
- Grease and line a loaf pan with aluminum foil.
- Sift the flour, baking powder, salt, cocoa powder, cinnamon, ground mace, nutmeg, allspice and cloves.
- Dredge the raisins, glazed fruits and walnuts in 1/4 cup of this mixture.
- Beat butter until light and fluffy.
- Add sugar while beating.
- Add eggs gradually while beating.
- Mix molasses, milk and brandy.
- Add nut mix to the butter mix.
- Add brandy mix to the butter mix.
- Pour into pan and spread evenly.
- Add toppings.
- Bake for one hour.
- Cool and brush with brandy.
- Wrap in aluminum foil.
- Age in refrigerator.
