Cheesecake
Ingredients for the Crust
- 2 cups all purpose flour
- 2 tablespoons sugar
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 2/3 cup shortening
- 6 tablespoons water
Ingredients for the Filling
- 1 225gram pack cream cheese
- 1 2/3 cups sugar
- 1 1/2 teaspoons lemon extract
- 1 teaspoon vanilla
- 1/4 teaspoon salt
- 5 eggs
- 3/4 cup evaporated milk, combine with 1 teaspoon lemon juice
Cooking Instructions
- Preheat oven to 300 degrees Fahrenheit.
- Mix and sift flour, sugar, salt and baking powder.
- Add shortening and mix. Mixture should look crumbly.
- Add water gradually till mixture holds together.
- Knead the dough lightly.
- Cut dough in half
- Place the first half at the bottom of a circular pan.
- Place the other half to line the sides of the pan.
- Chill the entire pan arrangement.
- Beat the cheese until soft.
- Add sugar, lemon and vanilla extract to the softened cheese.
- Beat the mixture until creamy.
- Add eggs one at a time to the mixture. Keep beating.
- Add lemon-milk mix.
- Pour mixture into chilled crust.
- Bake for 30 minutes
- Chill the cake before serving.
